Complete the Dish

Stovetop, very hot
  • 1 lb mussels

Standing2–3 min

Rinse the mussels and remove any hairy bits showing. (These are called the “beards”.)

  • ¾ cup real cream
  • 2 tbsp parsley to finish

Standing5–10 min

Add the mussels to the boiling sauce and cover tightly. Let it boil until all the mussels are open, about 5 minutes or so. If some won’t open, just discard them: they aren’t fit to eat.

Add the cream and stir.

Enjoy with bread, toast or dry crackers. Lemon juice is nice too.
